Preformed vitamin A, the retinoids, are found in animal foods, including butter, liver, eggs, milk, cheese. Vitamin A precursors, the carotenoids, are found in plant foods and are converted to retinol in the body. They act as antioxidants. Some examples include broccoli, red pepper, mango, and carrots. In the American diet, carotene (a carotenoid) provides the majority of the vitamin A consumed. The RDAs are set based on a mixed diet of the two forms. Preformed vitamin A is better absorbed than carotenoids and are the only form that can cause vitamin A toxicity.
