Line your body up even with the tray stand. The opening of the tray stand should be at a right angle with the server's body. Bend at the knees, as if you are about to kneel. Balance the tray before reaching the shoulder. Slide the tray onto the shoulder. If it is on the left shoulder, your left hand needs to be under the tray, using your right hand to control the tray. Then lift the tray with your leg muscles, not your back muscles.
