All of the carbons in the chain of a saturated fat are completely filled with hydrogen atoms while unsaturated fats have at least one carbon that is missing. This missing hydrogen atom results in the formation of a double bond. This double bond causes the chain to bend leading to molecules that are hard to stack tightly and are liquid at room temperature. Saturated fats, being flat, stack well together and, thus, form a tighter packed unit and are solid at room temperature.
