For analogy, female birds prefer to mate with a brightly colored male that sings vigorously and (in some species) has a long tail. Each of these features requires extra energy, and therefore a male with such features is probably healthy and perhaps has good genes. Similarly, the faces that people consider attractive may be associated with good health (and perhaps good genes). A face with approximately average nose, mouth, and other features is considered attractive, and average features have stood the test of time. They are more likely to be associated with health and good genes than any feature far different from average.
