When the body needs fat as an energy source, triglycerides are broken down and fatty acids are released into the bloodstream. Fatty acids are classified as saturated or unsaturated depending on their chemical structure. Trans fatty acids have a more complex structure than the other classes of the fatty acids and tend to raise LDL and total cholesterol in the blood.
