A captain is generally found in restaurants with higher priced menus. They are in surroundings that are more elegant than in an average restaurant where the clientele is usually willing to spend a great deal of money for a meal. Their responsibilities include an area of the dining room with as many as 60 seats and four service persons.
Responsibilities include:
• Supervising the service staff and bus persons in their station
• Greeting guests who have been seated at the table in the station
• Merchandising (selling) and taking all drink and food orders
• Tableside preparation, if called for
• Sometimes serving the meal (but more often the service person does the serving)
• Ensuring that the service staff and bus persons clear the dirty dishes and reset the tables
