Carbohydrates are the primary source of energy for the body and consumed in the highest amounts in the form of grains, bread, cereal, rice, potatoes and pasta groups. Carbohydrates can be divided into simple and complex. Simple sugars get absorbed into the bloodstream quickly raising the blood sugar. Therefore calories from simple sugars must be limited to only 10% of the total calorie intake. The average American diet consists of high amounts of simple carbohydrates, such as sugars, and low in starchy carbohydrates that contains fibers. Complex carbohydrates (polysaccharides) are found mainly in starchy vegetables, grains, cereals, breads, pasta and legumes such as kidney beans, black-eyed peas, green and yellow peas, and chick peas. Fiber content in complex carbohydrates slows the absorption of carbohydrates and provides bulk to the diet that eases passing of bowel contents through the GI tract.
