Although people have the same taste receptors, there are differences in how we taste. The number and distribution of taste receptors on the tongue affects how we taste spicy foods; the receptor cells respond differently to the chemicals in spicy food, which determines if you experience a burning or stinging when eating them. People have genes that cause them to taste certain chemicals (phenylthiocarbamide and 6-n-propylthiouracil) as bitter when eating certain foods. Our ability to taste varies with age: Children have a high number of taste buds and are highly sensitive to strong flavors, but as people age they have fewer taste buds and become less sensitive to tastes, bitter ones in particular. This can account for how our food preferences change over time-drinking coffee as we get older, for instance, whereas we do not like the taste as children.
