High fructose corn syrup is a widely used, inexpensive sweetener. It is the primary sweetener in sodas, fruit juices, candies, and processed foods. It helps breads to brown and can keep them soft. It also can reduce freezer burn in frozen products. High fructose corn syrup is a blend of fructose and glucose and is produced from corn syrup, which is glucose. The process of producing high fructose corn syrup has several steps:
1 . Corn grain is mechanically processed to extract starch.
2 . Starch is enzymatically broken down by amylase to glucose corn syrup.
3 . Glucose is enzymatically treated with glucose isomerase to form a mixture containing about 42 percent fructose.
4 . The 42 percent fructose-glucose mixture is then separated and filtered to increase the fructose proportion until it predominates.
