The banquet manager knows the number of people attending, the menu, and the time the food will be served; he or she can staff for the event without any wasted labor cost. On the other hand, the restaurant has to be prepared for a large group of guests, when in fact no one may show up. The à la carte restaurant may have many people scheduled to work, with little work to do. As the restaurant has to pay these employees, their labor cost rises and their profits decrease.
