The DASH (Dietary Approaches to Stop Hypertension) Diet was designed to test the effect of a diet low in saturated fat, total fat, and cholesterol and high in fruits, vegetables, and low-fat dairy products on blood pressure. The diet is rich in magnesium, potassium, calcium, protein, and fiber (see Table 14-9). In fact, the amounts of magnesium, potassium, calcium, and fiber greatly exceed typical intakes, but without using nutritional supplements.
