Hand service is serving the guests without the use of trays. In hand service, an individual plate is carried from the kitchen to the dining room by a service person. In order to have all guests served simultaneously, a restaurant must train their service people to work as a team, using many service people as needed to bring, serve, and remove the plates to all the guests at the same time. The restaurant must invest time and money in training, which results in higher menu prices.
