In a simple term, quantization is a conversion of an analog signal into a serried of impulse signals (digital signal). Sampling and quantization are also called an A/D conversion process. The quantization process is actually a sample/hold process with a pre-assigned number of holdings (equal levels) in order to recover the original signal and to be separated from the channel noise.
