Lipids are hydrophobic compounds composed of carbon, hydrogen, and oxygen. The three types of lipids are triglycerides, phospholipids, and sterols. Fatty acids, which consist of a carbon-and-hydrogen chain, a carboxylic acid group, and a methyl group, are the basic structural units of triglycerides and phospholipids. Fatty acids differ in chain length, degree of saturation, and shape. Triglycerides consist of three fatty acids attached to a glycerol backbone by condensation reactions. Phospholipids consist of two fatty acids and a phosphate, and sometimes a nitrogen-containing group attached to a glycerol backbone. Sterols consist of four connected rings of carbon and hydrogen.
