The polyunsaturated fat is the healthiest choice of the three that Catherine should choose to eat. The hydrocarbon chain of a polyunsaturated fatty acid has two or more double bonds between its carbon atoms. Although monounsaturated fats are often oils, the hydrocarbon chain has only one double bond between two carbons. The hydrocarbon chain of a saturated fat is full, or saturated with, hydrogen atoms.
