The functions of fats are essential to the body. Fatty acids are an energy-dense source of fuel for the body. Stored triglycerides cushion and protect bones, organs, and nerves and help maintain body temperature. Dietary fat provides essential fatty acids and is needed for the absorption of fat-soluble vitamins and carotenoids. Essential fatty acids are precursors to arachidonic acid and EPA, which are used to synthesize a variety of eicosanoids, substances that regulate several body functions. Cholesterol is used to make cell membranes, sex hormones, bile, and vitamin D. Phospholipids and cholesterol are part of cell membranes. Individuals who eat too little fat are unable to reap the benefits of these functions.
