Why is it difficult to attribute the increase in obesity and related illnesses to added sugars alone?

Regardless of diet composition, it is a calorie intake in excess of needs that causes weight gain. Many people who eat processed foods that contain added sugars may be obese because these same foods contain an abundance of high-calorie saturated and trans fats as well. Ultimately, foods with added sugars are eaten in addition to foods that supply the diet with essential nutrients (or in some cases replace such foods!) and this leads to an overconsumption of calories, which results in the development of obesity and its associated illnesses.
