While practical effects may ground a movie more solidly in the real world, they are still special effects that do not represent things the way they actually happen. They are often supplemented by digital effects and editing to make them more spectacular. But having to shoot special effects using actual vehicles and stunt performers often gives movies a stronger feeling of being real, even when they are enhanced by digital effects.
