Pasteurization reduces the number of viable pathogens, not to get rid of all organisms,
that can cause disease. Answers to this question depend upon the sources used. These
sources should be sited in answers. Possible answers are as follows: (1) For milk, High
Temperature/Short Time (HTST) heats the milk to 71.7oC for 15–20 seconds, Extended Shelf
Life heats the milk as in HTST and includes a fi ltration step, and Ultrahigh temperature,
which heats the milk to 138oC for a fraction of a second; (2) Almonds are steam pasteurized;
and (3) Fruit juices are commonly fl ash pasteurized. which is where the liquid moves in
a continuous fl ow while being subjected to temperatures of 71.5–74°C for about 15–30
seconds. Cold pasteurization uses ionizing radiation.
