Chemical digestion of proteins begins in the stomach. The acidity of chyme denatures proteins (makes them unfold) and exposes their peptide bonds. High acidity also converts pepsinogen into pepsin. Pepsin breaks peptide bonds, snipping proteins up into smaller polypeptides.
