“The way we eat has changed more in the last 50 years than in the previous 10,000.” There are various reasons why food consumption and production has changed rapidly since the middle of the 20th century. Between 1930 and 2000, U.S. agricultural output quadrupled. Technological advances in farming and nonfarm economic development were two of the driving forces behind this increase in production, with the former resulting in greater efficiency, consolidation of farmland into fewer and larger farms, and lower production costs. Beyond farm productivity, social changes also led to shifts in the production and consumption of food in the U.S. With more women entering the workforce, less time for mothers to spend on meal preparation led to the rise of frozen, prepackaged meals.
