A cell surrounded by hypertonic interstitial fluid will experience fluid loss. The osmotic pressure is higher in the interstitial fluid than that of the cytosol. This exerts a "pull" on the water molecules in the cytosol, and water moves out of the cytosol and into the interstitial fluid. As a result, the cell shrinks.
