The book mentions that maple syrup comes from the xylem sap of a tree. While this is true, why do you think most people assume it comes from the phloem sap?

The phloem mainly carries the sugars, and the xylem mainly carries the water, so one might think maple syrup would come from the more sugary phloem sap. Xylem sap has some sugar in it, but not much, which is why it has to be boiled down 50:1 to concentrate the sugars.
