Knowing preparation time, which means how long it takes to cook an item, will help the server determine when to "fire the table" for the main part of the meal. Knowing how long it will take to cook the item will also determine when the server should pick it up from the kitchen from when they fired the table. Knowing cooking doneness makes you competent with the guests. When guests ask what does cooking to "medium" mean, you can tell them it has a pink hot center.
