The medical school at Salerno, Italy, taught the Hippocratic treatments and the use of cold water. Monks in certain monasteries throughout Europe dedicated themselves to collecting, studying, and replicating classic Greek and Roman texts. Additionally, Middle Eastern physicians kept the tradition of water therapies and bathing alive. In fact, during the medieval "dark age" of Europe, Islamic countries became the centers of classical western scientific thought. Because of this, the knowledge of Aristotle, Hippocrates, Celsus, Galen, and others survives to this day. Ibn Sina, also known as Avicenna (973-1037 C.E.), was a Persian physician who practiced throughout Arabia. He based his practice on the teachings of Galen and did further research and experimentation in medicine. His chief work, Canon Medicinae, served as the most important textbook for physicians in western society until the Renaissance.
