In atmospheric storage, the fruit is placed in a dark chamber with a constant temperature between 32°F and 55°F, depending on the type of fruit. Then oxygen and carbon dioxide levels are decreased and replaced with the inert gas nitrogen. The fruit will stay fresh for many months if the proper balance of oxygen, carbon dioxide, and nitrogen is maintained; the temperature remains within the correct range; and the chamber remains dark.
