Emulsification occurs when bile salts mix with lipids. The nonpolar parts of the lipids interact with the lipids, while their polar parts interact with the surrounding watery fluid. This breaks up the lipid globules into smaller pieces. The end result is multiple tiny lipid droplets each coated with bile salts, a mixture called an emulsion. This gives the lipid digestive enzymes (lipases) enough surface area on which to work to efficiently digest the lipids.
