During the period when kings were in power and the wealthy aristocrats were influential in France, all the skilled cooks, chefs, and valets were employed by these individuals. When the royalty was overthrown and removed, many of these skilled people were out of work. Looking for ways to survive, these skilled cooks, chefs, and valets either started their own restaurants or were employed by another. As a result of the Revolution, French service began to grow along with the concept of the modern restaurant.
