Because animal intestine is modified for absorption, you would look for a slide that shows a single layer of epithelium lining the cavity. The cells would be cuboidal or columnar and would probably have microvilli on the surface to increase surface area. Because the esophagus receives undigested food, it would have a stratified epithelium consisting of squamous cells to protect it.
