People in China, parts of Africa, and Japan ingest a lot of carbohydrates in the form of rice and noodles and yet have a much lower rate of obesity than people who consume a Western, meat-centered diet. Analysis of their intakes suggests that they eat more complex carbohydrates and less simple sugars. They may also eat less animal fat from meats. When these people move and adopt a more Western-type diet, their rate of obesity increases to the level seen in the West.
