Because persistent chemicals like PCBs break down very slowly in the environment, and are fat-soluble, they can be biologically magnified in food chains and food webs. Each consumer in the food chain accumulates the chemical present in its food, and passes it all on to the organisms that eat it, and so on up the chain.
