from rural areas to urban areas, creates new challenges;
one of those challenges is the adoption of new dietary
patterns. How are these dietary changes impacting
global health?
Food sold within cities has shifted from traditional foods
toward highly processed food. Fast-food restaurants
have also replaced some vendors that would normally
sell local foods. Consequently, many of the same
developing regions of the world that have historically
faced food shortages are now engaged in this nutrition
