To distinguish muscle from fat on a pig, closely observe the animal from the side, front and back, and over the top. From the side, a fat, light-muscled pig will appear sloppy, particularly at the elbow pocket and base of the ham. Such an animal’s jowls will appear to droop and the hams will be straight down and flat from the tail to the base of the ham. From the back, the legs will be closely set and the hams will show little to no definition where the muscles join. The top line will appear square from side to side, and it will be difficult to tell where the loin meets the ham_
