The consumer plays a huge role in building a sustainable food system. As stated in the book, many farmers plant cash crops in order to help them get the biggest profit. It’s all about supply and demand. We, as consumers are the ones who demand what we want. So if we demand and only buy from sustainable and local farms, that is what more farmers will end up doing so that they can continue their farms. But it has to take us realizing what is not a sustainable food system, what crops have a large ecological footprint, and then refusing to buy the products. Plus, products from sustainable food systems normally taste better and are healthier.
