Why should you use an ANOVA instead of multiple independent-samples t-tests?

A t-test only examines the relationship between a single sample mean and a single population mean in standard error units. When we have more than two groups, there is no single population we are interested in. We must also ignore information about the standard error for groups we are not analysing, which may not be wise. ANOVA allows us to examine all groups simultaneously, which should be more accurate.
