The first deals with the qualifications of the individual service staff. Know each service staff person's strengths and weaknesses and schedule accordingly. The second deals with the type of menu and style of service that the restaurant offers. Know your restaurant and individual servers and determine how many guests a service person is required to serve. The third involves events occurring in the community in which a restaurant is located. The host should know any events planned and how these will affect his business both positively and negatively. The fourth factor is based upon the history from previous years' business. Use the logbook for forecasting and scheduling service staff. The fifth factor deals with a restaurant located in a hotel. These managers look at the expected occupancy rate to help determine the amount of staff needed. Lastly, know the number of reservations for that meal period. Following the five Ps of management here is extremely important for scheduling purposes.
