Fortification is the addition of nutrients by manufacturers to enhance the nutrient quality of the food and to prevent or correct dietary deficiencies. Vitamins, minerals, fiber, amino acids, essential fatty acids are added to foods. For example, breakfast cereals are fortified with folate to improve its nutrient quality. Enrichment of foods is the process of adding nutrients to foods in order to restore its nutritional profile to the state prior to processing. For example, four water-soluble B vitamins (thiamin, riboflavin, niacin, and folate) and the mineral iron are required by law to be added to refined grains. Enrichment of foods is a form of fortification.
