Responses will vary; foods affect the risk of cancer in at least three ways: foods that contain certain chemicals or compounds actually can stop or reverse the development of cancer; some foods contain carcinogens or that increase the risk for cancer; and if eaten regularly for long periods, certain foods provide an environment in which cancer cells can grow more readily. The American Institute for Cancer Research, the American Cancer Society (ACS), and the National Academy of Science (NAS) have all recommended dietary guidelines for reducing the risk of cancer. Reducing total fat intake; eating more fruits, vegetables, and grains; cutting down on salt-cured, smoked, and pickled foods; and drinking alcohol in moderation are common among all of the diets. The ACS and NAS have additional recommendation that include maintaining a normal weight, eat a variety of high-fiber foods, eating cruciferous vegetables, and eating more foods rich in vitamin A and C. It has also been recommended to get adequate calcium and to avoid foods that have been heavily treated with chemicals or processed with additives.
