Alcohol is absorbed in the stomach and small intestine. Some alcohol is metabolized in the stomach by the enzyme alcohol dehydrogenase before it can be absorbed through the gastric mucosa. Alcohol is mainly metabolized in the liver by two enzyme systems. The initial pathway is controlled by alcohol dehydrogenase. This anaerobic pathway converts ethanol to acetate. The MEOS system kicks into play when too much alcohol is consumed and overwhelms alcohol dehydrogenase. Both enzyme pathways use the B vitamin niacin. Alcohol circulates in the blood until the liver metabolizes it.
