Explain why water is a key component of enzymatic hydrolysis

Our digestive enzymes speed up chemical reactions as catalysts, a process known as enzymatic hydrolysis. Most digestive enzymes catalyze hydrolysis reactions—those that use a water molecule to break a bond between two molecules. The water molecules are key components of the reactions that chemically break down food molecules. These hydrolysis reactions would occur without digestive enzymes, but they would occur far too slowly and we would be unable to extract nutrients from the food we eat.
