Her picture does not work because it has the hydrophobic tails oriented towards the aqueous environments of the extracellular fluid and cytoplasm. The hydrophobic tails are not attracted to water and would cluster to form an inner layer with the hydrophilic heads oriented out towards the extracellular fluid and in towards the cytoplasm.
