Describe a case of foodborne illness that has led to policy

changes.


One outbreak of E. coli 0157: H7 was caused by fresh spinach
that had been contaminated. In part because of this
outbreak, the FDA issued new guidance to the food industry
to minimize microbial contamination of fresh cut fruits and
vegetables. Another example of food-related policy changes
is those intended to minimize risk of prions entering the
food supply. Because prions are found in the nerves and
brain of affected animals, the World Health Organization
recommends that all governments prohibit the feeding of
highly innervated tissue to other animals. Both Canada and
the United States have banned the use of such products
in human food. In addition, the USDA does not allow the
slaughter of non-ambulatory cattle for food purposes in order
to minimize risk of prions entering the food supply.
