What does it mean to be an audience-centered presentation speaker?

Being audience-centered means to keep the audience in mind at all stages of the speech preparation process. When selecting a topic, narrowing it down, selecting supporting material, etc., the audience must be taken into account. In addition, being audience-centered means to keep the diversity of an audience in mind. That means being aware of cultural information that might not be comprehensible, and being sensitive to stereotypes or terms that might be offensive to the audience.
