The first stage, sensitization, involves the initial contact with a food allergen, which is a protein that is incompletely broken down by cooking or digestion. This initial contact is followed by the production by the immune system of large amounts of antibodies, which subsequently bind to mast cells in the tissues. In the second stage, the allergic reaction, the same allergen is contacted again, after which it binds to an antibody-mast cell complex. As a result of this binding, histamine is released from the mast cells, triggering such reactions as swelling, hives, or asthma.
