In a trans fatty acid, the hydrogen atoms are on opposite sides of the double carbon bond. This configuration occurs naturally in meat and dairy products, which account for about 15-20 percent of the trans fats in the American diet. An unsaturated fatty acid also forms as the result of hydrogenation–the addition of hydrogen which causes a reconfiguring of some of its double bonds in processed foods--commercially prepared baked goods, margarines, fried potatoes, chips and other snacks, shortenings, and salad dressings. Trans fat raise blood cholesterol levels more powerfully than saturated fats.
