Why does the body have a different process for digesting and metabolizing fat than it does for carbohydrate and protein?


Fats are not soluble in the watery environment of the small intestine and are therefore more difficult to digest and absorb than other food components. Also, because of their composition, fats are not able to circulate in the blood immediately following absorption. Thus, they are initially transported in lymph.
