Why would food manufacturers be reluctant to remove salt from their prepared foods? Why don't they just make some sort of flavorful substitution?

Many of these food items stay on the store shelves for a significant period of time. It is important that foods do not provide an environment that disease-causing bacteria can grow in and then cause illnesses. Salt is added to foods to suppress the growth of harmful bacteria.

Children tend to like salty foods and request these from their parents more than less salty alternatives.
