The amino acid score, the protein digestibility corrected amino acid score, and the biological value can be used to determine protein quality. The amino acid score quantifies the composition of essential amino acids in a protein compared with a standard, usually egg protein. The higher the protein quality, the higher the amino acid score. The protein digestibility corrected amino acid score (PDCAAS) combines the chemical score with the digestibility of a food protein to give a more accurate indication of quality.
