What is the difference between a stem thermometer and a candy or frying thermometer?


Stem thermometer – requires calibration; may be calibrated by adjusting the hex nut under the thermometer dial; temperature range from 0°F to 220°F.
Candy thermometer – designed for high heat with a usual range of 100º-320ºF for home use thermometers and 60º-360°F for commercial models. Candy thermometers have a clip on the side to hold them inside the edge of the pan. Candy thermometers are calibrated by determining the boiling point of water on the thermometer and adjusting the temperature accordingly.
