Why are condensation and hydrolysis reactions referred to as "make and break" reactions?

A condensation reaction takes place when 2 molecules are joined together. This results in the formation and release of a water molecule. The opposite type of reaction, called hydrolysis, can split molecules apart. During hydrolysis, a molecule of water is used to break chemical bonds. Condensation and hydrolysis play important roles in digestion—the breaking down of large molecules—and metabolism—the synthesis of compounds that the body needs.
